Do you know what’s actually in your favorite coffee syrup? As a coffee lover, I always need a touch of sweetness in my brew. At home, we use a Nespresso machine and bought the same flavored syrups used at Starbucks, like the Monin brand. Although Monin is known for being one of the better options regarding artificial ingredients and preservatives, refined sugar remains the primary ingredient.
As we’ve become more mindful of what we put into our bodies, honey has become our main form of sweetness for just about everything. For recipes that call for sugar, we just add honey instead! However, sweetening my coffee with honey every day can get a bit monotonous, so I started experimenting with different flavors like lavender in my honey, to keep things fresh while still keeping it natural.
All you need are three simple ingredients: honey, water, and culinary-grade lavender buds. You just heat them up together and let the mixture infuse for a bit. The full recipe is below, but trust me, you’ll want to try this out!

Other Uses
I’ve been using my honey lavender syrup in coffee, mocktails, and even cocktails, and it’s always yummy. For my coffee, I typically add a tablespoon of syrup to an iced leggero pod with some half-and-half. For a refreshing mocktail, I muddle blueberries and lime with a tablespoon of the syrup, then top it off with sparkling water. To turn it into a cocktail, just add a shot of vodka—it’s seriously so good!
Honey lavender syrup is incredibly versatile and can enhance a variety of dishes and drinks. You can stir it into hot or iced tea for a calming touch, or blend it into smoothies for a hint of floral sweetness. It’s perfect for drizzling over yogurt, adding a unique flavor to your morning oatmeal, or incorporating it into desserts like cakes and ice cream. Try using it as a topping for pancakes and waffles to elevate your breakfast. With its sweet, floral essence, honey lavender syrup can transform everyday recipes into something special.
